Surprisingly enough this is the first soup I have attempted to make that is Keto diet friendly! a simple Google search let me to Kelly the Kitchen Kop and thats where the recipe came from with a bit of tweaking on my part. (Please remember that this is not my attempt to give/ steal recipes but rather share the experience of how easy it is to stick with low carb and not just eat the same things over and over!)
The recipe calls for:
- 2 T. butter
- 3 cups chicken broth
- 8oz. cream cheese
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 2 bunches of fresh broccoli, chopped
After chopping the broccoli place that AND the chicken broth in a suitable pot and heat until broccoli is tender.
While broccoli is cooking you can prepare the other items NOTE: do not let your significant other do your prep, you’ll be left with a mess!
After cleaning up said mess, place cheese, butter and cream cheese in another pot, stirring every so often until melted.
Next, check the broccoli, if it is tender you’ll need to either put half in the blender and puree or in my case I broke out my Kitchen Aide immersion blender.
First soup usage!
I selected the star blade which is recommened for puree or blending
Mix the broccoli until the broth and veg and thickend, the add the cheese mixture, stir with a spoon or ladle and enjoy!!
Overall I would give this 3/5. It was quick and easy but also very ordinary.
